Green Pasta Elixir

Today's recipe celebrates the renewal of body and spirit that comes with a new season and gives the palate the taste of novelty, through a combination of unusual flavours. Avocado, yogurt and fresh asparagus: a real elixir for the body that helps fight the defenses throughout the colder months.
The first, is a superfood par excellence, provides enough oleic acid that, in the right doses, rebalances the level of bad cholesterol (LDL), as well as nourishing hair, nails, skin. Rich in vitamins A, B1, B2, D, E, PP, K and antioxidants, it fights the oxidative stress that leads to cell aging.

Fresh ingredients for a light and intense taste

Yoghurt is a live food that has its strength in the bacterial colonies that live there. Streptococcus and Lactobacillus nourish the intestinal flora, strengthening the immune defenses experienced from cold and winter viruses. It is also a source of calcium, vitamin D, protein and is low in calories. It works therefore very well to make creamy sauces and seasonings without adding oil.
The asparagus has excellent diuretic properties, which makes it a valuable ally during the classic "detox" at the beginning of the season. It is essential to cook them briefly to preserve their colour, folic acid and vitamin C.
A winning trio, but where are the carbohydrates? In the wholemeal pasta that is rich in fibres with a high satiating power to keep you feeling fuller for longer. The critics might be put off by reading these unusual combinations, but then they will be won over by its contrasting textures - crisp and creamy - by the freshness of the dish which is enlivened by the pungent basil and the beauty of bright green colours that invite you to taste. It is impossible to resist the call of spring...

Ingredients for 4 people

70 to 90 g wholemeal short dough
500 g of asparagus
20 ml of extra virgin olive oil
Salt and pepper to taste

Avocado cream with basil

1 mature avocado
40 - 60 g basil
2 tablespoons of low-fat yogurt
20 ml extra virgin olive oil
Salt and pepper to taste
1 ice cube
