Turkey panino: the lightness of meat

It’s been a long day and you are beyond tired. After returning home late from the gym, the inevitable hunger takes over. So you open the fridge and...you can’t stop yourself from eating whatever is available. Think how much better you’d feel if you already had prepared a sandwich the night before for this moment. A delicious and healthy sandwich at that.
Today's recipe requires very little work in the kitchen, but still gives the satisfaction of a meal that has been prepared at home: Thanks to the additions of peppers to obtain, you can make a delicious sauce: a sweet and sour touch that gives a special twist to your sandwich.
You’ll also need a couple of slices of good quality bread, ideally wholemeal that is richer in fibre and a good source of slow releasing energy, making you feel fuller for longer. The turkey slices would also benefit from being of a better quality: better to opt for a product made by the butcher or trusted organic or natural slices. The quality of the meat is important for taste, but also for your health. Most of the cold cuts on the market are in fact full of salt as well as harmful preservatives: nitrates in particular (on the label laws E249 and E250) are considered potentially dangerous substances because in an acid environment (for example in the stomach) they are transformed into nitrous acid, which gives rise to nitrosamines, compounds considered carcinogenic. It’s better to avoid them if possible.

Turkey is very thin, but rich in protein, which means it can recharge you after training. To avoid a dry sandwich, instead of mayonnaise, use ricotta cheese made with a fork and enriched with fresh herbs and ground pepper for a healthier alternative.

Meanwhile, cook the peppers to perfection and season well with turmeric –this gives it colour and a good dose of antioxidants, finally add honey, vinegar and a drop of milk. Once the mixture is smooth, it is sweet, savoury and creamy.

All you have to do is compose your own sandwich and abandon yourself to the pleasure of a film and sofa. After all, you deserve it.

Ingredients for 4 persons

100 g wholemeal bread per person
12 lettuce leaves
8 dried tomatoes
400 g sliced turkey
120 g of ricotta cheese
10 g of basil
10 g chives
salt and pepper to taste

Pepper Sauce

4 yellow peppers
40 ml extra virgin olive oil
200 ml of milk
1 tablespoon of wine vinegar
1/2 onion
2 tablespoons of honey
1 teaspoon turmeric
salt and pepper to taste
